Carrot Surprise

Description

Carrots contain plenty of beta carotene, which boosts your immune system's production of healthy, infection-fighting cells. Debra Brammer, ND, clinical dean of naturopathic medicine at Bastyr Center for Natural Health, presented this recipe during a talk called "Herbs to Support Immunity," part of the 2011 Living Naturally fall lecture series at the clinic. Ingredients

2  
carrots, peeled
1  
rutabaga, peeled
1⁄2  
yam
1⁄2 tsp
cinnamon (optional)
1⁄4 tsp
cardamom, ground (optional)
1⁄2 tsp
sea salt
2 tbsp
ghee or olive oil

Instructions

Steam carrots, rutabaga and yam. Once tender, mash or food process with 1/2 teaspoon sea salt, 1/2 teaspoon cinnamon and 2 tablespoons ghee.

Notes

Variation: Steam 2 carrots with 1/2 cup snap peas in the pod and 2 tablespoons of fresh mint. Toss in olive oil or ghee.
