Sweet Potato Fall Fries

Take advantage of healthful sweet potatoes, which are a member of the nightshade family and are chockfull of beta carotene as seen by their vivid orange hue. Adequate amounts of beta carotene, a vitamin A precursor, help support vision, immunity and bone health. These colorful beauties are a snap to make, and can be enjoyed as a snack or paired with a hearty entree like steak, burgers, soups and warm sandwiches. 


2 lb
sweet potatoes
1 tbsp
olive oil
1⁄4 tsp
black pepper
1⁄2 tsp
salt or seasoned salt


Preheat the oven to 400 degrees. Cut each potato in half lengthwise, then cut each half into planks that are approximately 1/2-inch thick. Spread potatoes in a single layer on a baking sheet. Drizzle olive oil atop potatoes, and coat with desired seasonings. Toss potatoes until evenly coated with oil and spices. Bake for about 35 minutes, or until tender.
