Throughout the day, three distinctly different yet equally delicious versions of a Thanksgiving meal were offered: vegetarian, vegan and a traditional dinner with a healthy spin. Toss the vegetables in the olive oil, garlic and rosemary arrange on a sheet pan and roast in a 350 degree oven until they are tender.
