NEWS RELEASE BASTYR UNIVERSITY INTRODUCES INNOVATIVE NUTRITION DEGREE PROGRAMS Oct. 19, 2009 (Kenmore, Wash.) — Bastyr University is pleased to announce the expansion of its bachelor's degree offerings in the Department of Nutrition and Exercise Science beginning in the 2009-10 academic year. The University is now offering a Bachelor of Science with a Major in Nutrition and Exercise Science and one of the nation's first Bachelor of Science with a Major in Nutrition and Culinary Arts degree programs. The new degree programs are intended to offer students enhanced career opportunities in areas requiring both a deep understanding of nutrition and either culinary skills or exercise expertise. The nutrition and exercise science degree will combine the curriculum of Bastyr's undergraduate nutrition degree programs, which emphasize a "whole-food" approach, with that of its exercise science and wellness degree program, which integrates exercise physiology and holistic health and wellness. The combination nutrition and culinary arts degree — an innovative two-year bachelor completion program — applies Bastyr University's signature whole-food approach to the culinary arts. Students enrolled in the program will receive an education founded in nutrition and food science, while also developing culinary skills and an understanding of the therapeutic aspects of food. To help meet the needs of the expanded Department of Nutrition and Exercise Science, Bastyr has appointed Cynthia Lair, a longtime instructor of Bastyr's popular Whole Foods Production class, to the new position of culinary curriculum director. As director, Lair will both oversee the development and maintenance of culinary curriculum and assist new department chair Debra Boutin, MS, RD, with the recruitment, hiring, evaluating and mentoring of faculty for the culinary courses and programs. An actress, improv comedian and popular cookbook author, Lair features many of the recipes taught as part of the nutrition department's curriculum on her online cooking show, Cookus Interruptus. "We are well known for our whole-food approach to nutrition, and these new appointments indicate the commitment the University has to the continued growth and success of our nutrition programs," said Timothy C. Callahan, PhD, senior vice president and provost. Lair is well-suited for the new position, having been with Bastyr for 15 years as an instructor and whole-food curriculum advisor. She is also an improv actress and comedian by night, and hosts a popular internet whole food cooking show, "Cookus Interruptus." She is the author of Feeding the Whole Family and Feeding the Young Athlete. Lair joins Boutin, formerly an associate professor, core faculty member and dietetic internship director at Bastyr, who is the new chair of the Department of Nutrition and Exercise Science. Nominated for the position by her peers, Boutin will continue to oversee the University’s dietetic internship program in addition to her new administrative duties. "My personal mission is to support the creation of extraordinary nutrition and exercise science professionals," Boutin says. "The skills that students receive here will prepare them to work with clients in a wide variety of settings."
