Now that fall is upon us, it's only natural to begin new pursuits — whether that includes signing up for classes, delving into new hobbies or taking on new social or political causes. With that in mind, this issue of Bastyr News is dedicated to helping you plan your fall activities calendar. We've got the details on a number of notable events, including a panel of health experts debating "Reforming Health: What is Our Message?", as well as a lecture sponsored by our Department of Counseling and Health Psychology titled "In Pursuit of Happiness." Bastyr University is also proud to present an evening with acclaimed environmental journalist Michael Pollan, author of In Defense of Food and The New York Times best-seller The Omnivore's Dilemma. And have no fear, we are bringing back our popular annual Halloween event, Haunted Trails. We are also offering a variety of admission events on campus and around the country — important if you've considered starting a degree program in a natural health field. Moreover, in this issue you can learn about our acupuncture and Oriental medicine program, meet a graduate of our naturopathic midwifery program and get to know a student in our exercise science and wellness program. As always, we have included a featured recipe, Curried Lentils and Cauliflower. It is the perfect new dish for starting a healthy and hearty fall season. Enjoy the issue!

Dr. Amy Johnson-Grass

Alumni Spotlight: Amy Johnson-Grass, Naturopathic Midwifery Graduate, Practices Medicine She Believes In
Amy Johnson-Grass, ND, had always dreamed of attending medical school. But as she learned more about conventional medicine, she questioned this goal. While volunteering at a hospital, she saw the same patients — often allotted only a few minutes to speak with a doctor — returning repeatedly with health complaints. "I thought, 'Where is the quality interaction with patients so they don't need to come back again?'" she recalls. Dr. Johnson-Grass took steps to be a different kind of doctor who could make lasting changes in her patients' lives by completing three programs at Bastyr: nutrition, naturopathic medicine and the naturopathic midwifery certificate. "Each degree has fostered a piece of my practice," she says. Learn more about Dr. Amy Johnson-Grass.

Student Spotlight: Michelle Leary Studies and Promotes Exercise as the Foundation for Health
Michelle Leary had an athletic upbringing. It wasn't until she started taking Pilates, however, that she discovered the mental, emotional and spiritual sides of health. She began reading about nutrition and natural therapies, and soon enrolled in Bastyr University's exercise science and wellness program. Now, as she completes her summer internship as a personal trainer for an independent living community, she is learning first-hand the way exercise supports health in an older population. "Exercise really gives your body a strong foundation — it is one of the most fundamental things your body needs," she says. Read more about Michelle Leary and her career pursuits.

Program Spotlight: A Modern Acupuncture and Oriental Medicine Program
At Bastyr, we believe the best way to promote health is through a combination of ancient healing wisdom with modern medical science. With a Bastyr degree in acupuncture or acupuncture and Oriental medicine (AOM), you will be equipped to practice effectively in today's increasingly integrative medical environment. Not only will you learn the centuries-old practice of acupuncture and Oriental medicine, but you will gain an understanding of Western medicine and its interventions. Bastyr also offers a Certificate in Chinese Herbal Medicine which provides the opportunity to further enhance your herbal expertise. Learn more about Bastyr's cutting-edge AOM program.

Healthy Recipe: Curried Lentils and Cauliflower
Now that the weather is cooling down, it's a good time to make heartier, more substantial meals. This recipe for Curried Lentils and Cauliflower, served in the Bastyr cafeteria, fits that description (and it's healthy, too). The delicious curry spices warm you up, while the high-fiber vegetables and legumes satiate your hunger and support weight- and blood-sugar management. This dish also provides vitamin C, which will strengthen your immunity during the upcoming cold and flu season. Print this recipe and make it a staple in your home.

Experts Suggest Food Additives May Contribute to Hyperactivity in Children
According to a recent editorial in the BMJ (formerly British Medical Journal), evidence now indicates that food additives increase hyperactivity in children. A study published in The Lancet found artificial colors and/or sodium benzoate preservatives added to the diets of children who did not have attention deficit–hyperactivity disorder (ADHD) led to hyperactivity. According to the author of the editorial, "… an appropriately supervised and evaluated trial of eliminating colorings and preservatives should be part of standard treatment for individual children [with hyperactivity]." Read more about recent studies on food additives and hyperactivity.

Antioxidants May Alleviate Diabetes-Related Memory Impairment
If you or someone you know has diabetes and suffers from memory difficulties, a new study offers some good news. A report recently published in Nutrition Research shows antioxidant supplements can help minimize memory impairment, especially when taken along with meals. Because increased blood sugar causes a rise in free radicals — tissue-damaging compounds that cause many of the complications of diabetes — people with diabetes often notice a decrease in mentally acuity after large meals. The study showed taking antioxidant supplements with meals reduced this symptom. Find out more about this study and discover strategies for increasing antioxidants in your diet.

What's the Difference Between Probiotics and Prebiotics?
You may know about the health benefits of probiotics, the "good" bacteria that create a healthy ecosystem in your digestive tract. But are you familiar with prebiotics? Prebiotics are important dietary components that help keep probiotic bacteria healthy, encouraging them to grow and prosper. Beneficial prebiotics can be found in specific carbohydrate foods, including chicory root, Jerusalem artichokes, asparagus, garlic, onions, dandelion greens, bananas, legumes (lentils, kidney beans, chickpeas), wheat, oats and barley. Learn more about prebiotics and the best ways to use them to optimize digestive health and overall well-being.
