The gluten-free diet (GFD) is now a multi-billion dollar industry gaining in popularity with the general public. Gluten sensitivity is a controversial subject, where patients who have neither celiac disease (CD) nor wheat allergy have varying degrees of symptomatic improvement on the GFD. For those patients with CD, the GFD is undeniable and an essential medical nutrition therapy, as well as the only proven treatment that results in improvements in symptomatology and small bowel histology. Patients with CD can experience comorbid nutrition deficiencies and are at higher risk for the development of cancers and other autoimmune conditions.

Additionally, as more literature is being published on the topic of non-celiac gluten sensitivity, what is emerging is a condition greater than six-fold more prevalent than CD with associations to dermatitis herpetiformis, gastrointestinal dysfunction, rheumatoid arthritis and numerous cognitive complaints (i.e., depression, anxiety, bi-polar disorder, schizophrenia).

This seminar will summarize the current literature differentiating CD, non-celiac gluten sensitivity and wheat allergy with emphasis on recognition, accurate testing (immunoglobulin, antibody, and cytokine differentiations) and treatment protocols respectively.

  • Describe how to accurately test for Celiac Disease, non-celiac gluten sensitivity and wheat allergy
  • List the biomarkers of improvement for monitoring effective treatment protocols beyond symptom relief

Tom O'Bryan, DC, CCN, DACBN is an internationally recognized speaker and workshop leader specializing in the complications of Non-Celiac Gluten Sensitivity (NCGS) and Celiac Disease (CD) as they occur inside and outside of the intestines.

Since 2004, he has served as a teaching clinician for international audiences of healthcare practitioners, and currently holds teaching faculty positions with the Institute for Functional Medicine and the National University of Health Sciences. He serves on the Scientific Advisory Committee of the International and American Association of Clinical Nutritionists and the Medical Advisory Board of the National Association of Nutritional Professionals.
